Banana Cake

2 cups flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 1/3 cup sugar
1/2 cup shortening
1/2 cup sour milk OR buttermilk
1 cup mashed bananas
2 eggs, unbeaten
1 tsp vanilla
1/2 cup chopped nuts

1) Measure flour, baking powder, baking soda, salt & sugar.
2) Place shortening in mixing bowl and stir to soften; sift in dry ingredients.
3) Add 1/4 cup milk and mashed bananas, mix until flour is dampened
4) Beat 2 minutes, add eggs, vanilla, nuts and remaining milk; beat 1 min
5) Pour into 2 greased 8x8, or one 9x13pan
6) Bake at 350 for 30-40 minutes

WHIPPED CREAM FROSTING:

1 cup milk
6 Tbsp flour
1/2 cup margarin
1 cup Crisco
1 cup sugar
1 tsp vanilla

Mix flour in milk; cook together until thick.
Let cool; add butter, crisco and sugar
Beat well, add vanilla, beat well again
