Raspberry Jewels

1 pkg Raspberry or Strawberry Cake Mix
3/4 cups butter, softened
2 eggs. separated
Chopped pecans or walnuts
seedless raspberry jam

1) Preheat oven to 350 degrees
2) Combine cake mix, butter and egg yolks in a large bowl. Beat at low speed with mixer until dough forms.
3) Shape into 1-inch balls, dip in egg whites, then dip in chopped nuts.
4) Place on ungreased baking sheet; make indentation in center of each ball with thumb or wooden spoon. Fill with 1/4 tsp jam.
5) Bake at 350 degrees for 10-12 minutes or until light golden brown. Cool 1 minute on baking sheet. Remove to cooling rack.

yields 4 1/2 dozen
