Pineapple Zucchini Bread

3 eggs
2 cups sugar
2 tsp vanilla
1 cup oil
2 cups grated suxxhini
1 cup crushed pineapple, drained
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt

Directions:
1) Beat eggs, add sugar, vanilla, oil and zucchini
2) Then add flour, baking soda and sat
3) Stir in pineapple and nuts (optional)
4) Bake in 2 or 3 greased & floured pans at 325 degrees F for 1 hour
5) For small bread pans, bake half an hour
