Mini Cheesecakes

8 oz cream cheese
1/4 cup sugar
2 cups coolwhip
8-12 vanilla sandwich cookies

1) Beat cream cheese & sugar in a medium bowl until well blended
2) Add whipped topping, mix well
3) Place a cookie in a muffin paper, pipe cream cheese mix on top of each cookie.
4) Refrigerate 2 hours or overnight.

(For Chocolate, add 8 squares of semi-sweet chocolate to cream cheese mixture and use oreo cookies)
